Quinoa Kale & Chickpea Citrus Salad
This might be my absolute favorite healthy summer side. Oh my goodness! So flavorful and refreshing! The light citrus dressing, crunchy pecans, sweet craisins and salty feta cheese all gather together into harmonious culinary matrimony.
If you are looking for an easy summer side dish, look no further. Follow this recipe for a salad that is a great addition or any meal or even on it’s own. It makes a delicious fulfilling lunch!
INGREDIENTS
1/2 cup dry quinoa (Tricolor)
1 cup water
3/4 can chickpeas (15oz drained, rinsed)
2 cups kale (chopped)
1/2 cup chopped broccoli
1/2 red onion (chopped)
1/2 cup pecans (chopped)
1/2 cup craisins
1/2 cup crumbled feta cheese
DRESSING INGREDIENTS
1.5 tbsp apple cider vinegar
1/4 cup olive oil
2 limes (juice from)
2 cloves of garlic
salt
pepper
tsp maple syrup
INSTRUCTIONS

- First rinse and drain your quinoa using a strainer. Then boil the quinoa in slightly salted water according to the package instructions. Once cooked, drain and let it cool in a large bowl.
- While the quinoa cooks, wash, dry chop the kale. ( Be sure to remove the thick ribs.)HERES A TIP: massage with a little olive oil and smidge of sea salt. This helps give your kale a much more tender and reduces bitterness.
- Next, prepare dressing by whisking together all the dressing ingredients.
- Take the large bowl with your quinoa and toss in all other salad ingredients.
- Finally, pour dressing over salad and gently mix into your salad.
